Eggless Chocolate Brownie

Brownies goes good when they are served as it is or with chocolate sauce also with ice cream. This recipe is one which gives you the texture of brownie which I love the most neither fudgy nor like cake. I will give the tips for fudgy brownie.

Ingredients:
Dark chocolate – 50 gram (I used 55% dark Amul Dark chocolate)
Butter – 2 tbsp
Sugar – 3 tbsp
Salt – a pinch
Maida – 1cup
Choco powder – 1 tsp
Milk – 60ml
Baking soda – ¼ tsp
Baking powder – ½ tsp
Instant coffee powder – ¼ tsp

*1cup=120ml

How to prepare Eggless Chocolate Brownie:
  • Boil water in a bowl, now place another bowl on top of boiling water. Keep the flame in low also make sure the bowl which kept on the top should not touch the boiling water. Chop the chocolate into small pieces and add the chocolate into the bowl which is on the top.
  • Double boil the chocolate till it melts. Once the chocolate melts add the butter and mix till the butter melts and mix with the chocolate. Remove the chocolate bowl from double boiling.
  • Mix the coffee powder in 1 tbsp of warm water and keep aside.
  • Now sieve the maida, choco powder, powdered sugar, baking soda and baking powder. Add this to melted chocolate and mix well, now add the coffee decoction also add milk little by little and mix the batter.
  • Grease the 6 inch cake mould (preferred square shaped mould for best result while making pieces) and pour the batter into the mould. Tap the mould after adding batter to remove air bubbles.
  • In a heavy bottomed vessel place a stand and place the cake mould on top of it. Cover with lid and keep in high flame for first 5 mins, then keep in low flame for 15-20mins. Poke with knife or tooth pick which should come out clean in order to make sure brownie is completely done. Allow to cool then cut and serve.

Tips:
  • For fudgy brownie reduce the amount of maida or avoid using baking soda and baking powder. But this will take total 35-40mins to cook.
  • For soft lighter cake like brownie add another ¼ tsp baking soda extra.
  • Once brownie gets cooked it will start to leave the sides of the mould.
