Marble Cake/Zebra Cake - Eggless


Marble cake is a most popular tea cake which is a combination of two different flavours in a single cake with a random geometric pattern. Arranging the cake batter in the mould to bring up the pattern is a little time taking process, but while slicing the cake the random geometric pattern will give an excitement. This is also called Zebra cake. Use two contrast colour flavour to make the pattern visibility proper.
Make two batters of equal quantity or according to your taste increase one flavour and reduce another flavour. Also both the batter should be little thick, not much water, else they will mix together while arranging. Here I used wheat flour, also this is an eggless recipe.

Dry Ingredients:
Maida or wheat flour- 1cup
Sugar- 2 ½ tbsp or more according to taste
Salt- a pinch
Baking powder- ½ tsp
Baking soda- ⅓ tsp
Cocoa powder- 1tsp

*1cup=120ml

Wet ingredients:
Curd- ½ cup
Milk- ¾ cup
Oil- 2tbsp
Vanilla essence- ¼ tsp

How to prepare Eggless Marble Cake:
  • In a mixing bowl sieve wheat flour, salt, baking soda and baking powder. Mix and combine the flour mixture and keep aside.
  • In another bowl add curd, oil and sugar, mix well till sugar dissolves.
  • Add the flour mixture and milk gradually and mix well without lumps.
  • Finally add the vanilla essence and mix it. Divide the batter into two portions. In one portion add the cocoa powder and mix well.
  • Grease the cake mould add 2tbsp of white batter then 2tbsp of cocoa batter, repeat the same again and again.
  • If required swirl the batter gently using a toothpick or knife to form pattern as you wish.
  • In a kadai place a stand, gently place the cake mould on the stand. Cook in high flame for 5mins, then in low flame for 20-25mins.
  • If the cake is ready it will start to leave the sides and you will get the aroma. You can also insert the skewer or knife and check. Remove the mould from kadai, allow to cool, demould and slice the cake. Eggless marble cake is ready to serve.



Tips:
  • Batter should be thick, if it's runny pattern will mix together.
  • Instead of ½ curd you can use an egg or ½ cup condensed milk. Here ½ cup used is 60ml.
