Cabbage Manchurian


Cabbage manchurian is an Indo-chinese recipe also a popular Indian street food. The crispy cabbage fritters taste good when it's hot and combined with tangy spicy sauce. This goes well with noodles and fried rice.

Ingredients:
For fritters:
Cabbage- 2cup finely grated
Carrot- ½ cup grated (optional)
Green chilli- 2medium
Ginger- 1inch piece
Garlic- 5 cloves
Pepper- ¼ tsp
Corn flour- 2tbsp or more
Rice flour- 2tsp (optional)
Maida- 1tbsp or more
Salt- as required
Oil- for frying

For Manchurian sauce:
Oil- 1tbsp
Garlic- 1tsp finely chopped
Ginger- 1tsp finely chopped
Onion- 1 small chopped
Soy sauce- 1tbsp
Red chilli sauce- 2tbsp
Tomato sauce- 2tbsp
White Vinegar/Apple cider vinegar- 1tsp
Water- ½ cup
Corn flour- ½ tsp
Pepper- ½ tsp
Spring onions or coriander leaves

How to prepare cabbage manchurian:
  • To prepare fritters first grind the green chilli, ginger and garlic, add this to a mixing bowl along grated cabbage, carrot, maida, rice flour, corn flour pepper and salt. Knead them into a soft dough, if it's sticky add more corn flour and maida.
  • Shape it to balls and keep it into fridge for 15 mins. Now add the balls into oil and deep fry in low flame till golden brown or cook well. Transfer it to a plate and keep aside.
  • To prepare manchurian sauce take a pan add oil and saute the garlic and ginger, now add the onion and stir fry it, then add all the sauce and vinegar, mix well. Now add the water and cook for a minute.
  • In a small bowl mix the corn flour along with 2tsp of water to make a slurry and add it to the manchurian sauce. Cook till the sauce thickens little. Now add the pepper and cabbage fritters mix well and switch off the flame. Finally granish with spring onions or coriander leaves and serve hot.
