Akki roti/Rice rotti


Akki roti is a famous recipe in Karnataka. This is basically the combination of rice flour with mixed vegetables. Here I used carrot, you can also go for beetroot or only with onions.

Ingredients:
Rice flour- 1cup
Carrot-1medium (grated)
Onion- 1small (finely chopped)
Green chilli- 2medium (finely chopped)
Coriander leaves- 2tbsp (finely chopped)
Curry leaves- 2sprig (finely chopped)
Cumin seeds- 1/2 tsp
Coconut- 2tbsp(grated optional)
Salt- as required

*1cup=250ml

How to prepare Akki roti:
In a mixing bowl add all the ingredients, add water gradually and knead soft dough. Divide the dough into small equal portions for making roti.
Use a greased banana leaf or aluminium foil or butter paper or a wet kerchief. Place a portion of dough and pat with wet hands and make some holes here and there. Roti can be spread thin or thick according to you taste.
Heat the tawa in medium high flame and carefully lift the roti along with butter paper or wet cloth, place it upside down on the tawa. Gently remove the cloth. While one roti is on the tawa pat another one and keep ready to cook.
Sprinkle some oil and cook on both sides till brown spots appear here and there. Serve hot as it is or with chutney.

Tips:
You can also spread the roti on greased milk packet, the restriction here is you can make large size roti, also can't transfer it directly to the tawa instead need to transfer it to wet hand and place it on tawa.
