Idli-Dosa Batter

Idil and Dosa are the healthiest food ever. This is South Indian breakfast recipe. I am writing this recipe out of my own experience and experiment. I always use same batter for both idli and dosa. Also I have the habit of grinding both rice and urad dal together which give soft idli and crispy dosa.

Ingredients:
Urad Dal- 1 Cup
Idli Rice- 1 ½ Cup
Parboiled or Boiled Rice- 1 ½ cup
Fenugreek seeds- ¼ tsp(optional)

How to prepare Idli-Dosa Batter:
  • Rinse and soak all ingredients separately for minimum 4 hours or overnight.
  • Grind urad along with fenugreek dal for 20mins with adding water now and then as required. Also move the grains from the inside side walls of the grinder to the batter so that will get grind uniformly. Make sure the urad dal grinded into smooth and soft paste. If you feel its still coarse grind for some more time.
  • Transfer to a vessel, now add rice and water, grind it into smooth paste, it may take 30mins. Check the consistency in between, move the grains from the inside side walls of the grinder to the batter so that will get grind uniformly, also sprinkle water whenever required.
  • Now transfer the rice batter to the same vessel in which urad dal is already placed. Wash the grinder with some amount of water nd transfer it to the batter. Mix the batter well with hands or ladle.
  • Allow the batter to rest in room temperature to ferment. The fermented batter will fluffy and foamy, also increased in volume by raising up. Now the batter is ready to prepare idli or dosa.

Tips:
  • If you drop little amount of urad dal batter in water it should float if the dal is grinded properly.
  • If you want to grind the urad dal and rice together, first grind the urad dal for 10 mins and then add the rice along with urad dal batter and grind. This won’t affect the softness of idli.
  • Fermentation time will vary from 4hrs to 2hrs depends on the climate as well as our body temperature if we used our hands for mixing the batter.
  • Store the batter in refrigerator and bring to room temperature before using them.
