Nei appam/Unniyappam - Kerala style Onam sadya


Nei appam is a traditional Kerala recipe which will stay for 3-4days, taste delicious. This is also a special recipe during functions like onam.

Ingredients:
Raw Rice - 1cup
Jaggery Powder- ½ cup to ¾ cup
Dry ginger powder- 1tsp
Palayamkondan Banana - 2medium
Sesame seeds- ½ tsp
Water- as required for grinding
Salt- a pinch
Baking soda- a pinch (optional)
Oil- for frying
*1cup=185ml

How to prepare Unniyappam:

  • Wash and soak rice for 4-5hrs or overnight. Grind the rice along with jaggery powder, banana salt and required amount of water in a mixer jar for upto 90% smooth batter.
  • Transfer the batter to a bowl and rest for 6-8hrs. Now add the dry ginger powder, sesame seeds and baking soda mix well.
  • In a paniyaram Pan add oil half filled in each mould, once oil is hot enough add ¾ th with batter. Once the top side starts to form bubbles flip the paniyaram and cook.
  • Cook on both sides till it's brown and crispy. Transfer the paniyaram to plate and serve.

Tips: 

  • If the paniyaram is hard while cooking or after cools down and a tsp of maida with the batter.
