Milagu Vadai/Anjaneyar Vadai


Milagu vadai is also known as Anjaneyar vadai or Hanuman vadai because this is given as a prasad in hanuman temple. This is south Indian special temple recipe. Crispy and unique recipe easy to make with limited ingredients. This can be prepared in black urad dal or in white dal.  I used white dal here.

Ingredients:
Urad dal - 1 cup
Rice flour - 1 tsp
Pepper - ¾ tsp
Hot oil - 1 tbsp
Cumin seed - ¼ tsp
Hing - a pinch
Salt - as required

How to prepare milagu vadai:
  • Wash and soak urad dal for minimum 30 mins. Drain all the water and grind it coarse paste, sprinkle little water only if mixer is not running.
  • Crush the pepper and cumin seed, add it to the paste along with rice flour, hing and salt. Now add the hot oil as well and mix them together.
  • Grease oil on banana leaf or milk packet, dip hands in water and take a small ball size dough, place it on the greased surface. Place a greased banana leaf or milk packet on top of the ball gently press with a dabara for even shape.(you can also shape it flat using wet hands)
  • Make holes in the center also poke here and there using fork.
  • Heat the oil, check it by dropping a pinch of batter which should rise gradually.
  • Remove the cover on the top transfer vadai to hot oil using wet hands and fry both the sides in low medium flame till crispy and golden brown. Wait till the bubbles around the vadai get ceased then remove from oil. This will make sure the Vada stays crispy even after cools down.


Tips:
  • Soaking time can vary from 30mins to 4 hours. Crispness and texture depends on batter not on the soaking time.
