Ingredients:
Poha - 1cup
Water - 1 ¼ cup + 2tsp
Jaggery - ½ cup
Dry ginger powder- ½ tsp
Cardamom powder- ¼ tsp
Coconut - ¼ to ½ cup (grated)
Cashew nuts - 10nos (chopped)
Fried gram - 1tbsp (optional)
Ghee - 1tbsp
Salt - a pinch

How to prepare aval puttu:
- Dry roast the poha and power it to rava consistency. In a mixing bowl add the powdered poha and add 1 ¼ cup water gradually and mix well. Let it rest for 15mins, initially looks thick and clumsy, after 15mins it will become like crumbs.
- In a pan add jaggery and water, once jaggery melts filter it if required, allow the jaggery to simmer in low flame. In a small bowl keep some water ready to check the consistency of jaggery, pour a drop of jaggery into the water it should not dissolve in water and could be able to make a soft loose ball. If so jaggery is ready, switch off the flame.
- Now add salt and mix then powdered poha along with dry ginger powder, cardamom powder and coconut, mix them well.
- In a tadka add ghee and fry the cashew nut till it starts to change color. Add this to poha and mix well. Aval puttu is ready to serve.
