made with boiled chana with spicy flavour. This also contains fried garlic and
curry leaves to enhance the taste. This can be used as a snacks or side dish
for any kind of rice.

Ingredients:
Kabli Chana/Chickpea - 1 cup (boiled)
Egg – 1
Curd – 2 tbsp
Rice flour – 2 tbsp
Corn Flour – 2 tbsp
Red Chilli Powder – 1 tbsp
Turmeric Powder – ¼ tsp
Jeera Powder – ½ tsp
Hing – ¼ tsp
Salt – As required
Garlic – 15 Cloves
Curry Leave – 3 Sprig
Oil – For frying

How to prepare Chana Fry Dhaba Style:
- Rinse and soak the chana overnight and boil it with ¼ tsp of salt.
- Once the chana is cooled to room temperature, mix all the above mentioned ingredients except oil.
- Give a single crush on the garlic with skin. Heat the oil in the pan and add the garlic, fry till it turns golden brown, transfer to plate and set aside. Fry the curry leaves as well till crispy and set aside.
- Now add the chana to the oil by separating them here and there with fingers, so that will make sure they not getting stick with each other.
- Depends on the size of the pan add batch by batch and fry the chana till it turns crispy. Transfer them to the plate of fried garlic and curry leaves. Serve hot with tomato sauce as a snacks or along the rice as side dish.
