Mint chutney is also called as green chutney. This
recipe is a traditional south Indian style of chutney used as a dip for idli,
dosa, rice which is made up of fresh mint leaves.

Ingredients:
Mint leaves- 1 cup
Grated Coconut- 2 tbsp
Red Chilli- 4
Turmeric- ¼ tsp
Tamarind- A small piece
Salt- As required
Oil- ½ tbsp
Mustard Seed- ½ tsp
Urad dal- ½ tsp
Pepper- ¼ tsp
Channa dal- ¼ tsp
Asafoetida- A pinch
Water- As required for grinding
To temper:
Oil- ½ tbsp
Mustard seed- ½ tsp
Urad dal- ½ tsp
How to prepare mint chutney:
Clean and wash the mint leave and keep them aside.
In a pan dry roast the mustard in low flame till the
start to leave cracking sound. Transfer to a plate.
Add urad dal and Channa dal one after the other and
roast till start to colour change and transfer it to the same plate.
Now dry roast the pepper this also will leave
cracking sound. Then transfer to the same plate.
Dry roast the red chilli and remove it to the plate.
Add oil to the pan and roast the mint leave for 2-3
minutes.
Allow all these items to cool and add them in mixy
jar along with turmeric, tamarind, salt, grated coconut, asafoetida. Grind them
to paste by adding required amount of water.
Now in a pan add oil and temper mustard seed and
urad dal. Add the grinded paste to the tempered ingredients and sauté for a
minute.
Pudina chutney is ready to server along with idli or
dosa.
