Madurai Kari Dosai/ Kheema dosa

Kari dosa is a Madurai special recipe which is delicious dosa with egg and Mutton kheema kari. For this recipe I prepared kheema at home by getting piece from stall, will share the procedure soon. I also have publish Dosa Batter recipe.

Ingredients:
Chicken or Mutton Kheema- 250gram
Tomato- 2 large finely chopped
Onion- 2 large finely chopped
Ginger-Garlic Paste- 1 tbsp
Coriander leaves- few finely chopped
Turmeric powder- ¼ tsp
Oil/Butter/Ghee- 3 tbsp
Water- ½ cup
Salt – As required

To grind masala:
Red Chilli- 5nos
Pepper- ½ tsp
Coriander seeds- 1 tbsp
Fennel Seeds/Sombu - ½ tbsp
Cumin Seeds/Jeera- ½ tbsp
Cinnamon/Pattai- 1 small piece
Clove/Kirambu – 4
Cardamom/Elachi- 3
Bay leaf- 1

To prepare dosa:
Dosa batter- As required for 5 dosa
Eggs- 5 nos
Pepper- As required for egg
Salt- As required for batter and egg
Oil- for making dosa

How to prepare Kheema Kari for Kari Dosa:
  • Clean the kheema and set aside. Dry roast all the ingredient provide under masala section separately and let them cool. Powder them in a mixer and set aside.
  • In a pan add the oil and sauté the finely chopped onion along with salt and sauté till translucent.
  • Then add the ginger-garlic paste and cook for 2mins now add tomato and sauté till soft.
  • Add the kheema, grounded powder and turmeric powder sauté for a minute. Then add the water and close with lid, sauté occasionally till the kheema get cooked and the oil separates. Finally add the coriander leaves and now the kari for kari dosa is ready.

How to prepare Kari Dosa:
  • In a bowl beat 1 egg with a spoon or fork along with pepper and salt required for single egg.
  • Now add 2-3 tbsp of kheema curry along with egg and beat it. Now the kari mixture is ready.
  • In a dosa tawa add the batter for single dosa and shape the dosa. Once dosa is ¼ cooked add the Kari mixture on the dosa and spread it. Sprinkle oil on the dosa.
  • Let the dosa get cooked on one side flip it carefully on other side and reduce to medium flame, so that the other side also will get cooked. Now the dosa is ready to serve.
  • This can be served plain or use any non-veg gravy. I used Chicken salna.


Tips:
  • If the kheema is spicy enough, it is not required to add pepper and salt with egg.
  • If you feel kheema and egg is so heavy you can also make a thick non-veg gravy and mix that gravy with egg to prepare dosa.
