Ellu puranam kozhukattai/Sesame stuffed Modak

Ellu puranam kozhukattai is one of the simple puranam which can be made. This is also known as Modakam, dumplings.

Sesame_Stuffed_Modak

Ingredients:

For puranam:

Peanuts- ½ cup

Black sesame/Ellu- ¼ cup

Jaggery Powder- ¼ cup or more

Salt- a pinch

Dry ginger powder- ½ tsp

*1cup- 185ml

 

For outer layer:

Rice flour- 1cup

Salt- as required

Oil-1tsp

Boiling Water- as required*

 

*1cup- 185ml

*1 cup to 1 ½ cup of water for 1cup of rice flour

How to prepare ellu puranam kozhukattai:

  • For puranam wash the black sesame seed, drain water completely and dry in a cloth under the fan for 30mins.
  • Dry roast till the sesame seeds pop up. Transfer to a plate and allow to cool.
  • Dry roast the peanuts, if it's roasted peanuts just dry roast for few minutes, transfer to plate and allow to cool.
  • In a mixer add the roasted peanuts, sesame seeds, jaggery powder, dry ginger powder and salt. Grind them to coarse powder. Transfer to a dry bowl and keep aside.
  • If you want to shape this puranam to balls before stuffing inside, just add few tsp of boiling water and shape them to small balls of equal size. If you are a beginner shape to balls which will be easy to seal while placing into outer layer.

  • To prepare outer layer, dry roast the rice flour for couple of minutes. In a mixing bowl add salt along with rice flour, mix well and keep ready.
  • Boil water in a pan along with a tsp of oil. Add this gradually rice flour gradually and mix well with a spatula.
  • Once combine completely with the rice flour close with lid and wait for dough to become warm, now knead the dough well with hands. The dough should be soft not sticky.
  • Now divide the dough to equal size balls, grease your hands and flatten the balls with fingers to small puri shape. Now place a tbsp puranam or puran balls in it and bring the edges together gently pull the excess dough on top to form Modakam. (Shape as desired to ball or D-shaped dumpling, you can also use Modak/Somas mould after greasing it)
  • Place the Modak in a greased idli stand or steamer basket.
  • Boil water in a steamer or idli kadai, steam cook the Modak for 8-10mins.
