Coconut water is a pure form of drink which can be
given to babies next to mother's milk. Here is the recipe which is simple to
make out of coconut water. This will be a tummy filling healthy recipe which
can be given as a meal or snacks, this will tempt kids to eat as this will be
something different in taste and interesting. Adults can also have this as a
snack.

Ingredients:
Coconut Water- 500ml
Jaggery Powder- according to taste
Corn flour- 2tbsp
Dry ginger powder- ¼ tsp (optional)
Coconut- 1tbsp (optional, grated or chopped)
Ghee- ¼ tsp (for greasing the bowl)
How to prepare Coconut water pudding:
- Mix corn flour in 1/4 cup of coconut water and add to a pan along with remaining coconut water and jaggery.
- Stir it continuously till it thickens and stops bubbling.
- Add grated or chopped coconut in a greased bowl. Transfer the pudding to the bowl and refrigerate it till set.
- Serve it chill or in room temperature.
Tips:
- You can also serve this as a porridge for which setting the pudding is not required, skip chopped coconut if serving for the kids who don't know to chew.
- Add sugar instead of jaggery powder, the colour and taste will vary if adding sugar.
- Taste of the pudding completely depends on how fresh the coconut water is.
- You can also use tender coconut water and its flesh.
- It's not mandatory to get 500ml water you can use how much ever water available in a coconut which you break, adjust the cornflour quantity accordingly, the output quantity varies.
- You can also add coconut milk to enrich the taste.
