French Fries


French Fries are one of the all time favorite snacks for any age group. This goes well with any sauce or as it is. The secret behind crispy and soft French fries are frying twice and different temperature.

Ingredients:
Potato - 2large
Salt - as required
Chilli powder - ½ tsp

How to prepare french fries:
  • Wash the potatoes, peel the skin and trim the edges to get uniform size sticks. Keep a bowl of cold water ready. Slice the potatoes into sticks of medium size and drop them in cold water immediately.
  • Keep the bowl inside the fridge for 30mins so that potato sticks will soak in cold water and the starch will get removed.
  • After 30mins drain the potatoes and wash them in running water. Add ½ tsp of salt in hot water and add this potato sticks into it. Let it rest for 15mins.
  • Now drain the water completely and transfer the sticks to a kitchen towel. Pat them to remove all the water from the sticks.
  • In a kadai add oil, cook the potato sticks in low flame till the outside of the sticks get crust and inside becomes soft. It may take 8-10mins. Make sure the sticks should not change its colour majorly. It's fine if the corner changes the colour. Remove from oil and keep it in a wire rack.
  • Once the half fried sticks reaches room temperature fry them in medium high flame till they changes its colour to golden.
  • Remove from oil drain the excess oil in kitchen towel.
  • Now sprinkle salt and chilli powder and give a mix. French fries are ready to serve.
